Kraft Dinner vs. Tomatoes

Maira's earlier post really hits home when I think of food security. Pairing Kraft Dinner vs. tomatoes shows how out of sorts our food system is. Kraft Dinner is most likely seen as a family meal. It was in my home growing up. It was quick, easy, cheap and "the kids" (namely me), loved it. Tomatoes, even for the most ardent lover of them, is not really a meal. So not only are they expensive (relative to Kraft Dinner), but you need lettuce and oil or dressing for a salad, a starch perhaps (e.g., rice, pasta), and a protein of some type to make that a meal and that all adds to cost.

There is no question the latter options create a much more exciting, healthful, and appealing meal, but you are looking at dollars not cents for the per-person costs.

How do we make the cheap and easy dinner solution the healthy and accessible one?
